Four Cheese Chicken w/Butter Herb Crust |
So in our efforts to eliminate debt and leave a legacy for our daughters, my husband and I are becoming gazelle intense (
Dave Ramsey reference) about our finances. To make a long story short, we are being very frugal. This includes couponing, budgeting, more meals at home, trips to the library, and all the free family activities that I can find, pretty much anything that can save some money. Many would cringe at the thought of not being able to buy Mickey D's or Burger King whenever they pleased, but the reality is that we don't go for the healthy options offered at these fast food chains, we crave the fat cause it tastes good. It's okay to eat fast food every now and then, but it shouldn't be the staple that American families have made it.

Pepperoni mushroom with Mozzarella Cheese |
Being a penny pincher has inspired me to be more creative with my meals. Tonight was pizza night, homemade pizza night from scratch. Yes it took me 2 hours to make, but it was well worth it and so much fun. The whole family got to join in; Mommy made the dough, daddy read the recipe, mommy and daddy made the sauce, everybody added toppings and there plenty of slices to go around. Heck even Ellie got to have a little sauce, she' s only seven months old. This isn't the first time that we've made pizza at my house, DiGiorno visits our house from time to time, but it is the first time that we have used all fresh ingredients which gave us more bang for our buck. Our creations included Pepperoni Mushroom with Mozzarella Cheese and four cheese chicken with butter herb crust. Humph, being frugal has never tasted this good.
